Maybe I'm crazy, but I seem to recall someone (back in the 70's) made a pH electrode that monitored the pH of blood through the skin.

No, you are not crazy. most of pH electrodes that monitored the pH of blood through the skin applied on thin skin of human but not on thick skin of cattle.

And, i think there is a clear difference between them, in addition, i need micro electrode of pH meter to easily introduce via vein during correction of blood pH by addition sodium bicarbonate intravenously in case of blood acidosis in cattle.

If you have venous access you could take a sample for analysis. There are portable analyzers for this e.g. EPOC.
