I have used oregano essential oil as a natural preservative (spraying) to keep quality of fresh strawberry fruits stored at 7C for 8 days in refrigerator. I noticed an increase in the Vit C content although the fruits were stored in darkness?!. kindly, if any body has an explanation please answer me.
A few quick questions. How are you quantifying vitamin C? What is your sampling method (eg. do you take a certain number of fruits at each time point)? Is the increase significant (stats test) or within the range of variation found in strawberries? Also, is there vitamin C in oregano oil?

Although the physiological behaviors of the plant can not be interpreted simply by measuring limited traits, it can be speculated that the use of oregano essential oil increased the oxidation of D-glucose, which in turn could increase the ascorbic acid in the fruit. Therefore, measuring D-glucose can help in interpreting this behavior.
A good additional experiment would be to test other oils (olive, canola, corn, avocado etc.) to see if it a specific effect of your oregano oil or a general property of oils.
