Dealing with a helix antenna, made with flexible material and not rigid like using a PCB board or wire. At the beginning of the helix is too close to the ground plane, causing coupling. How can I get rid of this inductance problem, if I cannot use a PCB board design here.

Change your substrate (support) if you can use materials with higher permittivity, or use co-planar transmission line to design the antenna. in this case you haven't ground plane.
If I understand your question correctly, you have a (small, I assume) helical antenna, to which you want to give some physical strength, so you can lift it up high off the ground. Why not use wood? For example, can you not use tooth picks, to keep the coils separated by the necessary amount? Wood should be a fine material for this purpose. Tooth picks might be enough, if the antenna is small and light.
As you have describe and what I understood, that you are realizing Helix antenna in printed form. yes we have realized a helix antenna for GPS application in printed form as quadruple helix. here we may not go in to detail of it. But point related to your quarry will be tried to address. One thing we should keep in our mind flexible material on which we print helix is only acts as support for printed line form of helix. now for excitation of helix we can select coplanar line is the suitable candidate, although microstrip line also can be use. In either case at in point (launch point) of helix a smooth taper angle with respect to ground plane, is chosen such that, the overall structure give good matching at input point. This we can optimize using simulation software like HFSS of CST. The flaxible material we use as 10 mil thick polyimide or Teflon.
