what is the difference between GAMS software and CORAL?
If i want to solve NP- hard problem for example knapsack problem,
which of these software can be better?
GAMS ,MATLAB ,CORAL

I don't know about GAMS or CORAL, but I have used MATLAB and R. R is open source (and free), and has a library (like MATLAB's toolbox) that includes function for knapsack problem (library adagio):
