Fish protein hydrolysate, degree of hydrolysis DH?

I am preparing FPH using enzymatic hydrolysis with Subtilisin (crude preparation). After the hydrolysis assassment over time, the DH increased in the first hour then started to decrease. Is this normal? what could be the reason for that?
