You can choose from a wide variety of hydrophobic monomers for the bead formation.

Why you want to make beads without pores? According to me you can reduce the pore size by changing the concentration of acrylamide. but anyways you will be needing pores on the surface so that enzyme availability for surface will be easy.
Immobilisation of enzyme on the bead surface without pores can mitigate the diffusion limitation but the enzyme loading on the surface is usually very low. One of the solution is to reduce the bead size, in order to increase the available surface for reasonable enzyme loading.
Yes, adjusting the acrylamide concentrration or bisacrylamide concentration can of course reduce the pore size so that the enzyme can not pnenetrate into the pores. Similarly, you can also selected non-porous galss beads.
Where do you want to use it? there are many support available to immobilise PGA on, you can reduce particle size in order to obtain bigger total surface area, but please consider that small particle size means difficoulties in filtering or, if you want to work in column, big pressure problems.
