I want to examine a kind of fruit's extract's antimicrobial effects. At first I want to put it under the UV radiation to prevent the mold or any kind of fungi's and bacteria's growth.
The question is : Does the UV radiation affect on fruit's substances ?

UV treatments lead to higher antioxidant capacity, flavonoids and phenolic content. But, UV irradiation significantly reduced carotenoids in certain cultivars. While improved retention of phytochemicals has been reported in UV-C treated fruit, increased losses have been reported in certain cultivars.

@Traci_Testerman Actually I want to use UV radiation before extraction to kill the surface's microbes and prevent mold. And yes it has pigment on it's cortex and core.

UV does not sterilize - it has limited-to-no effect on spores of bacteria and many fungi as well as for some pigmented (melanized) fungi. Any antimicrobial effect on fruit surface will be marginal.
Surface treatment with dilute bleach (pH 6.5) would be better due to coverage but also does not sterilize - the same microbes would are resistant.
