I am not sure whether I understand your question correctly, but if you want to measure the effect of temperature on conductivity, you should naturally measure the resistivity in a series of experiments in which the temperature of the investigated material is known. - But it depends on your system. If it is a bulk material and a conductor, then the experiment is straightforward. However, you also mentioned "nanomaterials" in your keywords, so in that case optical approaches to obtain information about the electronic structure of the material might be more applicable.
Yes, at some point, the rate of increasing temperature will eventually affect ANY measurement. The "ideal" condition may vary substantially depending on what you are looking for. Typically, for any stationary (equilibrium) processes, you need to increase (or decrease) the temperature as gradually as possible (with a constant rate) to prevent the manifestation of "undesirable" non-equilibrium processes in the measured sample. On the other hand, if you are interested in time-dependent phenomena (kinetics), you can measure the response of your sample on the changing rate of heating (cooling). The resulting curves, known as TTT (Time-Temperature-Transformation) diagrams, are usually studied for amorphous (glassy) systems. So, to put it simply, if you exceed the "ideal" (for your sample and type of measuring properties) heating rate too much (beyond its "equilibrium" value), you may cause quite significant damage (transformations) inside your sample which, in turn, will result in "unconventional" (unexpected) behavior of the measured properties. Basically, you will get another physical picture, which is also interesting, by the way. For example, any glasses (structural, spin, metallic, superconductive, etc) are very sensitive to the heating/cooling rate, resulting in some nontrivial (nonergodic) effects.
