I'm looking into starches in papers, which are mostly cationic. When I apply an iodine-iodide solution to paper I can identify starch but I'm not certain if is non-modified starch or cationic starch. Granular starch is easily identifiable, but when starch is modified it is no longer granular and should be more amorphous and bound to the cellulose fibres. This is what I visibly see but I can't find a good source. However I did find that the iodine could bind to the cationic group instead. Does the helix still form with cationic starches? Does the DS influence this? Are starches in papers more cross-linked?
