I have to evaluate yoghurt samples for six characters (i.e. Color, Appearance, Odour, Taste, Texture and Overall acceptability) using a 5 point hedonic scale. Can I use 5 samples at a time?
Hello, using 5 samples is appropriate, but I will also suggest that the samples be presented in duplicates and numbered randomly, and not presented in a way that the same samples will be presented one after the other this will help to reduce variability in the result.
For Olive Oil sensory assessment, according to the IOC Method in force, an Official Panel Group can taste between 10 to 12 a.m., no more that 4 samples per session.
Session is a set of 4 samples. The following session must start no earlier than 15 min later the end of the latter one.

For sensory analysis of food product, there are at least 7 panelists comprising of different groups of society should be included to check the acceptability of the product.

Agreed...not exceed 5 samples in a row. However, there still a gap between sample 30-60secs tested and subjects must rinse their mouth with water / plain cracker to avoid carry over / adaptation effect. If you have more than 5. You can separate it with a longer time(gap) before continue with another set (let say another 5 samples) or you can consider to have seperated sessions if you have too many samples to be tested. Number sample to be tested in sensory evaluation should be carried out based on the nature of sample, efficiency of respondent , number of samples and time between two samples . Sensory panelist should not be exhausted during evaluation either you take 5 point hedonic scale or 9- point hedonic scale.
Exhausted means panelist give similar test result. If you test the sample in fresh mood then correct test result is found. In my opinion, sufficient time between two sample test should be given to avoid similar trends of result.
I would say that we have to find the best compromise between the number of samples tested by the panel and the number of sessions needed to perform an experiment. We have several publications with 10 samples tested in the same session with good results.
If the temperature is one of the factor could affect to the quality of your samples , so you should plan the number of samples without the effect from that factor.
