I would be interested in instruments able to asses empathy and prosociality in an specific time and sensible to changes after a short activity or intervention.
Here's a study that uses a measure of state (situational) empathy:

The Empathizing Quotient from Baron-Cohen and colleagues at Cambridge is popular and freely available from their web site. We tried is removing negative wording in questions which sped it up a little. See attached.

You could consider using the Social Value Orientation Slider Measure as a state measure of prosociality. We've found it to be sensitive to experimental manipulations.
