A probiotic that has an extra gene, for example: a cytokine or a protein that expressed by the probiotic

It has been done (attached link relates to colitis, but more models have been researched using LAB-expressing IL10). http://www.ncbi.nlm.nih.gov/pubmed/10958782.

Also LAB have been made to express ovalbumine (OVA) and used in animal models of allergy.
