This question concerns the correlation coefficients reported by AMOS for latent constructs. These differ from the correlations obtained for the composite constructs by, for example, SPSS. However, I have several negative correlations between constructs in SPSS, but in AMOS I only find positive values. Is this because AMOS only reports the absolute values? And is there a way to adjust this?

Yes AMOS often gives a absolute results (removing error). However, AMOS does not tell that the relationship is significant or not (e.g. does not give p values that can be obtained in SPSS ie. p=0.01 ** or p = 0.05 *). There is not rule in particular, you can follow whichever more appropriate to your results. I have sometime used SPSS correlation while sometime only AMOS correlation in my papers.
