I have to agree with the previous posters that there is a lot of literature out there. I think it would be helpful if you describe what kind of method you would like to employ on which kind of proteins as there are different approaches.

However, if you are interested in the basic principles first, there is a nice article from Gary Siuzdak in Encyclopedia of Analytical Chemistry (not a website but a really good resource book) although it is a bit old but not necessarily outdated:
