Hi, univariate analysis only uses "a single variable" to explain whataver you are trying to predict or to explain. In time series analysis this is very usual because you can predict a variable X(t) with a function of early values of the same variable: X(t-1), X(t-2), etc, etc.
Now, one can say that X(t-1) is another variable, different from X(t), but in the end they are X(t)s all the time: daily COVID infections, monthly inflation, stock prices, etc.
Multivariate analysis uses several variables to explain or predict whatever you are trying to explain or predict. Examples of these are regression models, or SIR type of models in epidemiology. the typical exponential Growth model, au contraire is a typical univariate model, because you explain the evolution of a variable at a single function of time "t".
