I have no personal experience. The IR spectrum of ethyl formate shows differences from ethyl acetate: https://www.google.hu/#q=ethyl+formate+ir+spectrum (see the figure hits) but I am not sure that it is enough for trace level detection. I would try by GC-MS. You must choose a column where those compounds have really different Kovats index. Since you are looking for traces, you must inject a high quantity of sample, as higher as your injection port and column allowed.
Thank you for your responses. I was certainly planning on using GC, possibly using gas-solid rather than gas-liquid chromatography, if I can get hold of an appropriate column.
