CMC usually is a property of detergents, which form micelles. Those values are typically in the low mM region. Regular lipids, such as those you mention, form bilayers, vesicles or multilamellar liposomes, not micelles. The equivalent of CMC for these lipids is the concentration at which the formation of the bilayer (vesicles) starts. These concentrations are very low, like nM to uM. The best way is to measure it. If you have a spectrophotometer or a fluorometer, you can prepare a lipid suspension at about 0.1 mM concentration and measure OD or light scattering at 500 nm. To measure light scattering on a fluorometer, just set the excitation at 500 nm and measure "emission" from 480 to 520 nm. All you see is light scattering at right angle as long as the lipid does not fluoresce at 500 nm (which it does not). Then dilute the suspension 2-fold and measure again. Keep diluting until you see sharp drop in OD or light scattering. That concentration will be the "CMC."

You mentioned the excitation and emission spectra settings but you didnt mention the slit width for both excitation and emission? at what values should we set the fluorimeter at?
