Dear Shri,

welcome,

May be the most suitable pressure sensors is the piezo electric sensors. You can make an array of them to measure the pressure profile of the foot pressure. You can measure the voltage developed by the sensors and you can calibrate it directly to measure the pressure. You can acquire the voltage by using DAQ cards of national instruments connected to labtop or a PC.
