I have to determine antioxidant activity of protein and its hydrolysate extracts by DPPH methods but I have extracted protein in buffer. So now I will make different concentration of protein extract in water as it is soluble in water only and DPPH is soluble in ethanol/methanol.

During DPPH assay absorbance is increased by increasing concentration of protein extracts (extract is prepared in water and diluted with water to make different concentrations). As protein get precipitate due to the presence of ethanol/methanol. how can I determine the exact inhibition concentration?
