Due to aging older people have a loss of interest by adequate intake of food, especially liquids and fibers. The loss of part or all of dentition difficult the use of fibrous foods. The oat flour would be more appropriate.

Porridge or chapati from mixture of cereal(sprouted dried and powdered wheat & ragi), pulses(grit or powder from sprouted and dried green gram) and oil seeds(gingelly seeds) to meet the need of calcium, CHO and protien and some vitamins.
Yes,if u have ingredients u can prepare any recipe.It will be better if some green vegetables and curd will be added,it will be a balanced meal for aged person.It will be easily digestible and nutritionally rich due to value addition.
jowari, bajri ( types of millets) wheat, corn, soya, green gram, chick pea or nagli another type of millet, roasted and ground. used for making flat breads or chilla or chattuu (powder mixed with hot water and consumed).
Roasted curry leaves and sesame seeds with dry coconut garlic and some salt (powdered) makes a good blood and bone tonic for elders.
Methi seeds sprouts excellent for liver and the digestive system. But all the above forms must be well cooked and soft for easy digestion for the elderlies.
