I think that crystallization process is to purify the compound. so if your material is good crystallinity, you will get a good spectra in all these instruments and can get characteristic bands and peak for particular functional groups. If it is not a good crystalline material which means it has some impurity, you will see the spectra in which absorption band and peaks will shift from its original position.
In my knowledge you can get the overall structural behaviour of any material with the help of XRD. Its shape either sharp or broad will provide its crystalline or amorphous structure. you can use Bragg's law and Scherrer formula to get its interlayer spacing and crystalline size.
