Generally, in educational studies, biological sex is used as a variable to distinguish different genders. As biological sex and social gender may differ, I would like to use social gender as a variable. Is there a possibility get a valid evaluation in a paper-pencil questionnaire?

It is very possible that you can use pencil paper questionnaire to measure social gender. But to use this instrument, the variables for measuring social gender must properly be captured. You can use gender role, gender characteristics, social character, bedarchy (the situation where a particular gender dresses, behaves and act like the opposite sex), etc. When proper social gender variables are itemized and properly captured, questionnaire as an instrument can be used and data generated can be tested and used for valid generalization.
Maybe I am already a bit late with my answer but I had kind of the same issue for my research and I decided to use the BSRI (Bem Sex-Role Inventory). Yes it says 'Sex-role' but the categorisation items it is using are social norms and gender stereotypical items with which you can analyse for instance the tendencial gender role of your participant. If you use it critically and reflected then the evaluation can go beyond the existing gender binary. In the beginning of 2017 a whole edition of the magazine sex roles dealt with Sandra Bem's papers.
