Have a look at the paper I am attaching. It is actually a microplate-adapted colorimetric assay, but you can easily scale it up to use a normal spectrophotometer, and/or use microcuvettes for the readings.

Search for method for determining antioxidant potential as TEAC (Torolx equivalent antioxidant capacity ) by UV-spectrophotometer. Few years back we had generated a lot of data on fresh fruits & vegetables & products using the same.
