I add 0.1 from crude cellulase to 9.9 ml silver nitrate and the solution is ok after 10 minutes: the color change. However after 2 h I found something in solution ( see the picture )

It looks like your particles are aggregating in that image. That would mean your particles are not stable, likely due to not having enough capping material in solution. I am not sure what shape you are trying to make or why you chose cellulase, but you can try various polymers as well, PVP in particular is commonly used. To blank your UV measurement, use the same matrix (cellulase in water) just without nanoparticles present.
