Probably not, as they might be quite different enzymes, and you'll be comparing your fungal source with humans/mammals. Do you have the peptide sequences and possibly structure data, so you can make some educated guesses?
For reliable and really useful data, you'll need some human amylase. Possibly the porcine variant is suitable, or use recombinant human enzyme.
If you should be able to establish the fungal amylase as model system for the human one, this might suit as a quick and cost efficient tool to monitor e.g the extraction and purification of your inhibitor.
