At least (or best) use a water solution or dispersion. Potential antimicrobial efficacy in food will not disperse.
You can use DMSO or other organic solvents but your data will be effectively meaaningless technical trivia.

It's better to be transparent or homogeneous without particulate matter can be opaque also, viscosity is another important factor for the anti-microbial testings. As Phil says, at least an aqueous solution is needed!
