I found in our store, a number of HPLC grade acetonitrile bottles which exceeded the normal shelf life (with about three years!).
Do you have any idea of what the possible problems that may occur when using such acetonitrile? Or would there be no problems with using it?

Is it "HPLC" grade acetonitrile from a reputable supplier? You could ask them.
The possibility of some polymerization should be considered. Filter the solvent through a Teflon based membrane filter (0.22u) before use.
As William Letter says, the better the quality of product and the higher the reputation of the supplier, you have more chance. I would also be concerned with how old the stock is, given the propensity of MeCN to degrade into HCN which I would want to be careful of!
