I'm looking into the process of calcium resorption in osteoderms (i.e., bony elements embedded in the dermal layer of various vertebrates). I was wondering if there are any other mechanisms in animals that result in the resorption of calcium besides osteoclast activity. Any information or papers will be highly appreciated!

But note that this is whilst experiencing a physiological anomaly, which may not apply in the normal.
For normal bone resorption osteoclasts are required. Without osteoclasts, their TRAP, acidic environment in the sealing zone, etc.
the MMPs alone are not sufficient to promote resorption.
In pathological processes like tumors or bone infection, this can happen. I am not aware of any normal process doing that.
