If check bites are being used to set a semi-adjustable articulator, I would take right and left lateral records. Moreover, try to align the posterior teeth so that the patient does not go too far into the lateral swing. That way the instrument would be set to produce the best functional motion where the teeth actually are in working and balancing position.

If you were to use average values, then it would be more logical to procure larger sized mean value articulators which already have the set mean values incorporated. One of the prime objectives of using the semi- or fully-adjustable articulator is so that the patient's values are used to obtain a better treatment result.
Ask Tom Lee at Panadent. His company sells an articulator with curvilinear analogs based on statistical averages. He may be able to recommend analogs having the "values" you seek. If you are using adjustable mechanical articulators, checkbites in working and balancing sides during intermediate right and left lateral positions may be helpful.
I think a better option would be to look at the Staub-Cranial occlusal technique. I have restored many full mouth and many full denture patients with this technique. It is easy and it is as full proof as possible in getting and retaining the anatomical vertical dimension. That is the vertical dimension that the patient was born with and not the acquired vertical after habitual wear by the patient that doctors often restore to. You will be amazed when you get the first one back to find that the vertical has been opened several millimeters and the patient is completely comfortable. Additionally opening the vertical back to anatomical can prove the necessary volume space for the tongue and cut back on the possibility of sleep apnea for the patient especially the aging patient.
