I am currently researching on PEF for VCO applications. The PEF tool I use can only be used for liquids. However, in some journals I read there is a PEF tool that can be used for solids. Which is better for the application of PEF on coconut meat or coconut milk? Which of these two processes can result in yield and quality of the VCO is better?
PEF is considered as one of the electro-based novel technology. Mostly it is suitable for pumping fluids. That case, coconut milk is a good cadidate for the same. PEF is certainly advantage over regular thermal processing but you have to study the quality aspects.
As rightly said, PEF can be best option. It has been already tried in any plant oil.
