As per my understanding there are three independent variables,

Vaccination: Yes/ No,

Bite: Animal with and without historic bite,

and Age: 6 categories,

and the outcome variable is infection: Yes/ No.

 If the reference category of outcome is "not infected", then the interpretation would be, vaccinated animals were 40% less likely to get infected as compared to non-vaccinated animals. Animals with historic bite were 2.2 times more likely to get infected than those without historic bite.  Here, more than 36 month old animals have taken as reference, so, animals in lower age group were more likely to get infected as compared to animals aged more than 36 months. Hope these results are statistically significant.

In that sense it is correct that getting vaccinated is a protective factor and having historic bite and lower age groups are risk factors for being infected.

Just a cautionary note, if you want to say "for all categories age its risk factor and animals ( 6.1-24 months) are more susceptible that other categories" just be careful to do the proper pairwise comparisons with some adjustment for multiple testing (e.g. Bonferroni) before you put that in a paper. For now, as Vinay says, you can only say that they are more likely to get infected than the reference category (if it is significant).

You may also want to try to model age as a continuous variable (if you have the information) to check if the relationship is linear and in the process free up some d.f..
