i want to check brix of dates which are in dry state. How to check its brix?

Dry foods! I think you need to hydrate the dry food, and then factor in the level of moisture added into the brix measured.

Crush the dry fruit with little quantity of water which is sufficient to squeeze the fruit for extracting a drop of juice. Calibrate the refractometer with distilled water and the take the reading.
