You have several problems to solve.
1. Determine what size nanoparticles are suitable for the sensor.
2.what ratio of oxides gives the best result for determining moisture sensitivity
3. Zinc oxides are more sensitive to moisture and therefore a mixture of oxides can be damaged due to gyroscopicity.
These questions must be sought in the literature or determined by yourself.
ZnO will be more suitable for sensing application in many ways while comparing with SnO2.
for the sno2 I think in and li are the best dopants to get a very good humidity sensor

well, It depends on the sensitivity and selectivity of the fabricated sensor providing the crystallite size and morphological properties of the nanoparticles. you may examine the optical properties also
