Thanks for your answer. The reason I ask the question is I try to use gel-phased lipid bilayer to avoid the insertion of protein into the bilayer. From what you said, proteins may still insert into bilayer but maybe slower than they do with bilayer in fluidic phace. I think you are right. Thanks again.
For exemple plasma membrane ATP-dependant proton pump does locate (highly) preferentially in ordered phase. In the old days of the early '90 we actually use to purify it from TX100 resistant domains. Other plasma membrane proteins do behave the same.
