In case you are trying to correlate pollutants that affect human vision and hearing by studying these effects on rats, you should be aware that rats are capable of hearing at higher frequencies than humans. Moreover, it would be interesting to know, in case you are studying particulate pollutants, whether these pollutants impair hearing by causing ear infection.
As per my knowledge, you can do a qualitative evaluation and not a quantitative one.
This is normally done in Functional Observation Battery (FOB) testing in rats to study the effects of drugs/chemicals. For audition, a forceps/clicker is brought behind the ears (so that the animal cudn't not see it), and a click sound made. You can check literature on FOB/NBO (Neurobehavioral observations) to get details. I have attached few manuscripts.
For vision, opthalmoscopy rand esponse of pupil to lightc an be done along with checking its movement/gait in an open area.
