Do you have a vegetable in mind? How many vegetables are dioecious? For dioecious plants for which the DNA sequence of X and Y chromosomes is known you can do PCR and determine the sex.

To reply to Bir Bahadur's comment: most Cucurbitaceae are monoecious, not dioecious. Plus he did not answer the original question.
