Stability of anthocyanins is very low and they are rapidly absorbed and eliminated.
Does anyone have any or know of papers that have assessed anthocyanin bioavailability in various forms such as capsules, liquids (juice concentrate), whole fruit?
The solution form is surely more bioavailabe because the active compound is already dissolved and should be only absorbed. The other forms filled or composed by solid compounds require the dissolution of the active constituent before it will be available for absorption.
I agree Dr. Venditti about the required dissolution process of drug from its solid state taking some time. On the other hand, you need to consider the chemical stability in solution that could reduce the drug content available for absorption from GIT.
Agreed, I do think that the liquid form will be more easily absorbed. However as Fleming said, there is likely to be less stability of anthocyanins in solution therefore making it less bioavailable.
