The ability of organic fertilizers to stimulate plants goes well beyond their nutrient content. While vermicompost is a complete organic amendment it is also rich in calcium which can promote improved quality in the crops you mentioned. In fact the Calcium level of vermicompost is about double the Nitrogen content. Calcium is very important for earthworm activities and somewhat over looked for fruit and vegetable quality and storability.
Conventional fertilizers do not consider Carbon for its role. Organic fertilizers contain humic and fulvic acids which can act as growth regulators. Humic components can increase nutrient absorption and stimulate early and vigorous rooting for instance. The organic components also are known to buffer the toxicity reactions found in many tropical soils. These organic components are also able to provide complete nutrition which is not necessarily available is some conventional materials. When Carbon is deficient in the tropical soils water relationships will suffer. Organic approach puts lots of emphasis on optimizing the Carbon content and most of water and aeration potential of soils are greatly influenced by this.
The use of compost teas have aslo been demonstrated to have ability to stimulate host adaptation and defensive metabolisms and the organic materials themselves can have probiotic complements of beneficial microbes. Vermicompost which is really worm manure is quite soluble and can be absorbed directly by the plants. In one case with tomatoes the addition of just 20% vermicompost could increase tomato yields by over 55% compared to commercial conventional metro mix which was advertised as having complete nutritional content.
This type of information points to organic methodologies as representing production potential beyond a more simplified nutrient based concept of conventional farming. The French have a term terrior which roughly is the sense of the soil. There traditional knowledge couples the best grapes to the best soils for those grapes. The ability of concentrating on improving the soil is the heart of organic agriculture and as the soil is made better the quality and quantity of production can increase and the influence of pests and pesticides can diminish.

Maria, your question is very interesting . I dont think, any plant has the mechanism to absorb organic form either nitrogen or phosphorous from organic liquid fertilisers. It is always the ionic forms ( nitrates or ammonium in case of nitrogen or dihydrogen phosphate or trihydrogen phosphate in case of phosphorous), since nutrient transporters , basically made of proteins remain embedded in plasmalema of root cell walls..
It is mobilisation of both native and applied nutrients , which are influxed into the rhizosphere of these crops , thereby , improving the nutrient- and water -use efficiency both in such a way that their productivity alongside quality remain so good...

This kind of fertilizers increase hydrogen in soil solution and help to absorb the other ions well in many plants such as olive and watermelons(my experience).
