For a scoping review in the field of health professions education I want to search the WHO, UN, EU resources as well as hand-search resources of other international bodies or NGOs. I know that the WHO has the Library Database IRIS, how about the others? Exists any register of such resources?
Or, is there even some kind of "guide" or literature out there on how to tackle this systematical.
Any help will be greatly appreciated!

It involves the use of library databases and search engines such as google. However, you can also use techniques such as browsing websites of organizatios relevant to the search area, or even performing hand search.

For the use of search engines give emphasis to google, Baidu Yandex and Bing

A truly reproducible and minimum biased SR is very hard to achieve (my opinion). And as long as we are coming up with improved methods (based on codes or not), then it is something very good in my view.

Dear Martin Lehmann that is a good and very systematic idea for an approach.
For the EU you should search the https://european-union.europa.eu/index_de site which should help you to find free documents.
During the last 15 years I did my PhD and two Master thesises (LLM & MA) by help of free internet researches mostly by simple google searches. If lucky you hit a database as starting point for further searches. E.g. the ILO has a large database for Int. Law of Labor.
In particular the UN organizations have good databases and data collections... Furthermore some US universities have amazing collections/databases, e.g. Stanford and others...
AND what I observe in medical papers: most try to research medical databases, preprint servers, etc.
You have to look and find for yourself. But that is part of the fun.,..
