How do you get that through the IRB? You might look at the number of ulcers in people who ride the subway in Beijing, China compared to those who live in the country.
Make a study trip til Guantanamo. Or use available stress tests like the Trier Stress Test.
I think you need to be a little more specific and tell about the ethics of your experiment, to get useful answers. Is it a short time or long time study, prison setting?, workplace setting? Is it the space restriction in it self that should provide the stress, or???

The Trier Stress Test, or adaptations thereof (see e.g. Trier Mental Challenge Test, Montreal Imaging Stress Test) provides a good frame of reference as it has been widely examined in various populations and study settings.
That being said, the exact research question under examination should determine which test to use and/or develop for this particular study.

Probably, I should be more clear on the design/focus of the experiment. We need to perform a precise set of measurements using the whole body calorimeter, which is basically a small chamber, where you can do a few steps.
For the purpose of our experiment, we need the individuals to be "non-stressed" and then "stressed", in a paired design for each individual. As the non-stressed state will be considered within the chamber, we will probably have to ignore at this point to the stressing character of the enclosed chamber itself as otherwise the measurements won't be possible.
Definitely this will be interesting for space physiology/psychology I think - our ambitious objective is to objectively, directly measure severity of the stress reaction.

Thanks for clarifying the setting in which your experiment is situated.
Further questions to be answered in order to be better able to select an appropriate task would be (i) whether individuals will be able to move and/or talk while being enclosed in the chamber?, and (ii) whether they can somehow be presented with (audio)visual stimuli and (iii) give feedback (verbally and/or through a selected input device (keypad, mouse, etc.)).
Is your intention to measure the stress reaction solely at a physiological level, or will you also include the participants' subjective response to the stressor presented?
(I would suggest to include subjectively experienced stress reactions, to capture the subjective aspect of psychosocial stress).
