I am looking for pointers on works on detecting and redacting sensitive textual information (such as patient names and identifiers) present in medical images. The images include MRI, CT scans, Xrays, angiography etc.
Any products / platforms available doing the same shall also help.

Working with echocardiography CPACS systems and radiology PACS systems, most of the newer systems have software that can eliminate patient information to be used for teaching files.
The items you want to remove are defined in the DICOM format. For example: patient name -
Patient's Name Attribute
Tag(0010,0010)TypeRequired, Empty if Unknown (2)KeywordPatientNameValue Multiplicity1Value RepresentationPerson Name (PN)
Patient's full name.

Seems like, turn-off tags output is not available, and the question is about how to detect text on the image that was exported from DICOM format, i.e. jpeg, png, etc. So, the text info overrides image data. If so, you can try to apply any tool that detect text on images, but there is no guarantee to get good quality.
