I don't have a good answer for that. I was asked to investigate the latent period of Phytophthora ramorum on Rhododendron and the answer in that case was: It took about a day for lesions to be visible, and from then on you could see symptoms, even with the application of fungistats, the lesions were just smaller. [Shishkoff 2014. Plant health progress:doi:10.1094/PHP-RS-12-0124] . However, other people have reported latency for symptoms of P. ramorum on fruit. There is also the problem that some tree-infecting Phytophthoras (like a couple of Phytophthoras on citrus trees) are present on roots, and aren't "visible" until rain splashes them onto leaves and fruit. Is that latent? Sort of.
