Since acetic and caffeic acid both have a carboxyl group, will acetic acid interfere the carbodiimide (EDC)/NHS coupling reaction between caffeic acids COOH and gelatins NH2?

Let's say we use only glacial acetic acid for solvent (Not in this case, but generally), Is it even possible to preform carbodiimide coupling reaction in this environment?
