I was wondering if a dry (powder) oil in water (o/w) emulsion will reform an emulsion if it is rehydrated in an aqueous solution?
The o/w emulsion I have in mind would contain a lipid content between 5-15% when dry.
I have already identified the process to create the dry emulsion, just want to know whether the dry emulsion will reform an emulsion upon reconstitution.

you will never obtain a powder out of an oil in water emulsion, except in freeze drying when you pass the melting point. Obviously it will not re-dissolve, because the oil has very marginal solubility in water. You will have it to redisperse in similar manner as during previous production.
Yes..it will be re-disperse in water because your dry o/w emulsion also contains some surfactant...the critical factor in this matter is reconstitution fluid volume..optimize the precise reconstitution volume..
I would agree with Professor Titus Sobisch. It will not be or never be dissolved. It will only be dispersed in the aqueous phase. The emulsion (or dispersion) which you have prepared is a dispersion in water phase. When you convert it into powder by freeze dying, you get a powder. Once again if you are reconstituting the powder with water to it, you will get back dispersion (emulsion). Simple!

Actually here questioner wants to ask that whether the o/w emulsion will be formed or not after dry powder..it will form o/w emulsion again with optimized reconstitution volume...if his/her system would be SMEDDS then reconstitution volume of water will not affect because SMEDDS is stable system while adding infinite reconstituted volume of water..but here just simple o/w emulsion..so reconstitution volume of water will definitely affect to form o/w emulsion... ..without optimization it will not form o/w emulsion (here the case of re-dispersion of dry powder in water) again..
I used the wrong terminology in my initial question. I said dissolve but should have used disperse instead. I am sorry if this caused any confusion. I will change the question to disperse. But yes, the question I have is whether a dry emulsion, created by drying a liquid o/w emulsion, can form a o/w emulsion again if added to an aqueous solution.

If you dry an oil in water emulsion you will end up with oil phase without water but containing the emulsifier and maybe in your case even more (in case you have additional ingredients you did not yet mentioned). You will have to disperse the residuals again in water.
