It is generally observed that scientists and researchers worldwide always try to genetically engineer wild-type hyper-producer (high-yielding) strains that already produce enough/excellent quantities of products at industrial level. Moreover, if the strains and/or processes are already adopted at industrial scale for cost-effective production and commercialization of products very efficiently, why would companies welcome any further improvement studies?

Unfortunately, this field is not my research area so far I have no opinion on this field.
There are several reasons to improve any known cell factory, including yeast systems. I can give you three instances. (1) The glycosylation pattern of yeast is different from that of the mammalian system, so if one wants to produce a human protein in yeasts for therapeutic application, the protein product most often turns out to be immunogenic. For this reason, scientists are trying to engineer yeast strains that have similar glycosylation pattern as in humans for the production of non-immunogenic proteins.
(2) One can also consider knocking out proteases and other enzymes in yeast to improve mRNA half-life and protein expression. (3) Lastly, one can also choose to engineer the secretory pathway. All these could further improve the yeast cell factory for tailor-made applications.

There is no saturation point in terms of profit or competition. I produce 10 Grams/Liter today remains competitive only till a competitor is not there with cheaper sales price. Secondly, the cost of raw materials increases day by day making 10 grams/Liter non competitive and you need to have 10+ to survive.
