Phycoerythrin is a natural colourant obained from algae especially seaweeds. But this colourant was not famous and no where it is utilized commercially. I have seen so many references on this about application uses, but in practical i have not come across any article related to this pigment for food application. If any ref kindly send me.
If any detailed invitro or in vivo study related to this phycoerythrin on toxicity profile, kindly share. It will be useful for further studies.
