I work with starch gels and I am performing experiments using cone and plate geometry with 1mm of gap because that height allows me to handle the samples better. I still can not understand why rheometers have the gap fixed when using this geometry and changing the gap is not recommended, I looked at several papers, as well as in Macosko's and Barnes' books and some manuals and they all say the tip of the cone has to be really close to the plate but they don't mention why exactly. I know shear is constant over the gap for this kind of geometry and I don't see why setting a custom gap would lead to errors. ¿Is it possible that under the cone's tip plane, radial flow will occur and that of course will make that I get wrong stress values?
