Why do we test a symmetric coin cell and a full cell separately?
What is the purpose of these two tests?

In this article, there are 3 different kinds of cell assembly for the battery test, and I don't know the exact purpose of each test.

in the (common) coin cells' experiments for battery tests, we are confined to, only, two[1] (WE, CE) electrode's configuration[2] case studies.
Symmetric coin cells' configuration (for battery tests, versus full cells' configuration) might help to disentangle complexities coming from any (common) generic (different) materials, used as CE (Counter Electrode).
Some of the (possible) CE-complexities, from non-symmetric (full) coin cells' configuration, might be due to different:
a) metal substrate[3], or/and different
b) active material[3], or/and different
c) electrolytes[3], or/and different
d) electrolyte//WE interface[3].
So, the (simplest possible) symmetric coin cell (minimum configuration for battery tests, versus full cells' configuration) offer some, nearly, 'analytic' tools in order to investigate (troublesome situation) problems, separately, an isolated cells' issue in: either the WE, or even the Electrolyte (materials' properties).

Ioannis Samaras and Friedrich Emanuel Hust already give an excellent answer. Just want to add something related to this. One must be careful when performing this setup. In a special case, when coupling the same electrode material in the lithiated and the de-lithiated state (i.e lithiated graphite | graphite), these cells are, respective to the mathematical definition of symmetry, actually not symmetrical after assembly. The term "pseudo symmetrical cell" is then preferred.
