I do not know your exact arrangement, the size and shape of your "dielectric probe", but it will respond to any change in capacitance or conductance. The problem is not the detection of such signals, but their interpretation, as several mechanisms overlap (electrode polarization, interfacial polarization, dipolar relaxation, electrode reactions etc.).

Thank you very much for your notes. You are correct. There is a double layer capacitor formed in between the biological tissue and the inorganic dielectric probe, which can indicate any bio-signal transients during the measurement.
