Not quite sure of your question, as I have never bought these compounds as "salts". Most of these are quaternary amines that are sold in their zwitterionic form, with a positive ammonia and a negative phosphate. Check out Avanti Polar Lipids for these materials.
You are right Robert. Sometimes, these polar lipids are sold in their salt forms as example in the case of DSPE, an ammonium salt from Avantis. Zwitterions are also sold without any associated salt forms. salts might help with stability, as well as handling, and to play around with the feasible reactivity with various pH, solubility etc.
